Oolong tea, also known as green tea, is one of China's six major tea types, renowned for its unique semi-fermentation process and rich aroma. Its production is primarily concentrated in Fujian, Guangdong, and Taiwan, with representative varieties including Wuyi Rock Tea, Tieguanyin, Phoenix Dancong, and Dongding Oolong. From a craftsmanship perspective, the core of oolong tea lies in the "making of green tea." Alternating between shaking and airing the leaves breaks down the cells at the edges of the tea leaves, promoting the moderate oxidation of polyphenols and resulting in the distinctive appearance of green leaves with red edges. This process imbues oolong tea with a rich aromatic profile, resulting in notes of floral, fruity, and honey. For example, Anxi Tieguanyin is known for its "orchid fragrance," while Wuyi Rock Tea, grown amidst the Danxia landforms, develops a unique "rocky charm." The roasting process further influences flavor. Lightly roasted tea produces a refreshing, bright flavor, while heavy roasting produces a smooth, sweet flavor.

 

Oolong tea has long been highly regarded for its health benefits. Research shows that it is rich in tea polyphenols, amino acids, and caffeine, offering antioxidant, lipid-lowering, and weight-loss benefits. Traditional Chinese Medicine believes that oolong tea is neutral in nature, refreshing the mind while soothing the stomach. In southern Fujian and Chaoshan regions, the Gongfu tea drinking method elevates oolong tea drinking into a cultural ritual, brewing in small pots and cups to delicately experience the changing layers of the tea.

 

The contemporary oolong tea industry innovates while inheriting traditions. Taiwan's Dongding Oolong, known for its lightly fermented style, has become a global favorite, while mainland Chinese tea companies are using modern technology to optimize variety selection and process standardization. In 2022, Fujian Oolong tea-making techniques were inscribed on the United Nations Intangible Cultural Heritage List, confirming its cultural status.

 

From tea gardens to tea banquets, oolong tea embodies the Eastern people's reverence for nature and their aesthetic pursuit of life. Its semi-fermented philosophy is like the doctrine of the mean - impartial and just right, which is the essence of Chinese tea culture.
