Oolong tea, also known as green tea, is one of China's six major tea types, situated between green tea and black tea, and is a semi-fermented tea. Its unique flavor and quality stem from its exquisite craftsmanship and distinctive technical characteristics.

The "greening" process is the core technology of oolong tea. This process involves alternating shaking and airing the leaves, which damages the cells at the edges of the tea leaves and triggers the moderate oxidation of polyphenols, resulting in the characteristic "green leaves with red edges." This process requires precise control of temperature, humidity, and time. The intensity of "greening" varies significantly between varieties (such as Tieguanyin and Dahongpao), directly affecting the aroma and flavor of the finished tea.

The degree of fermentation is precisely controlled. The fermentation degree of oolong tea typically ranges from 15% to 70%, much lower than that of black tea (over 80%), but higher than that of unfermented green tea. During fermentation, tea polyphenols are partially oxidized to form theaflavins and thearubigins, giving the tea its translucent golden color and mellow, sweet taste. Traditional charcoal roasting further stabilizes fermentation and enhances aroma complexity.

Roasting techniques determine final quality. Oolong tea is dried in two stages: primary roasting and secondary roasting. Primary roasting rapidly removes moisture, while secondary roasting develops aroma through slow, low-temperature roasting. Northern Fujian oolongs (such as rock tea) often use high-temperature, short roasting to highlight caramel notes and minerality, while Taiwanese high-mountain oolongs are primarily lightly roasted to preserve delicate floral and fruity aromas.

Oolong tea also requires stringent requirements for fresh leaf material, typically harvesting one bud, two, or three leaves, on sunny afternoons to ensure optimal moisture content. Its technical system integrates biology, chemistry, and empirical wisdom, embodying the essence of traditional Chinese tea-making techniques.
